Two Months in and still going strong

Okay so I have been on the diet for two months now and I am still going strong and really enjoying it. I have currently lost 9lb so that is an average of over 1lb a week which I am more than happy with at this stage.

The things I have mainly learnt are about cooking from scratch, I have made Chicken Kievs, Pies, Quiches and other things that 6 months ago I would have laughed in your face if you had told me that I would be doing!

Tonight Diet Coke Chicken and Spaghetti - this has become our favourite meal for takeaway night without the takeaway:

Ingredients
2 Chicken Breasts (Diced)1 Can of Diet Coke (330ml)1 tsp Chinese 5 spice

Optionals:1 Medium chopped onion6 tbsp of passata1 Crushed garlic cloveSplash of worchester sauseSplash of soy sauce (for those that like a bit of heat)Splash of tobasco (for those that like a bit of heat)Any spare veg you have leftover

Directions
  • Diced the chicken (not too big) and brown in a frying pan with some frylight.
  • Add the can of coke.
  • Stir in a heaped teaspoon of chinese mixed/5 spice.
  • Simmer until the coke reduces (stir occationally).

We tend to have this with either Rice (egg fried) or Spaghetti.

Half a week in.

I am actually surprised at how well I am managing at the moment. Adam and I are loving trying out the new foods that we are cooking and I find things taste so much better when they are not covered in fat like the usually are. So far we have had:

Smash Pizza
Pasta Carbonara
Burger and Chips

All of these were Syn free on slimming world (maybe using some healthy extras) and they tasted amazing all of them.

I have been saving syns for chocolate as we all know how much I love and need my chocolate but I am also finding I do not necessarily need that much either. Everyday I have used between 5 and 10 syns where I thought I would be struggling to keep it down under the 15 mark as recommended. I am really surprised at how much it fills me up and how when I go to the fridge for a snack I am already automatically bypassing the chocolate and going for celery or some grapes.

I really can't wait till my first SW class on Wednesday (I have been running it alone this week) to see how much I have lost and really looking forward to taking my mum and having her join in this journey with me too.

Day One :)

Day one and I decided against the slimfast, mainly because it tastes disgusting!! So straight on to slimming world. Weighed myself this morning. 18st 7lb - more than I thought I was.

Todays food has been:


Snack: Banana and a glass of Skimmed Milk (HEA)

Breakfast: Ham Omelette and one peice of brown toast with butter (1.5 syns and HEB)

Lunch: Banana and a Sausage roll (2.5 syns)

Tea: Chicken, Veg, Yorkshire Puddings and Potatoes (5 Syns)

Snack: Banana and some chocolate

Last day beforehand

So today is the last day before the challenge starts. I have just had a sausage and chip dinner from the fish and chip shop and am not going to worry about anything that I eat and drink today.

First thing tomorrow morning I will weigh myself and then the challenge begins.

Wish me luck and I wish luck to everyone else in their challenges.
